Birch Glow Mocktail

To mark the end of the birch harvest season, we're raising a glass to slow living with a Birch Glow Mocktail — refreshing, hydrating, and full of farm-to-face spirit. 

Beyond being a refreshing celebration of the season, this mocktail nourishes more than just your senses — it nurtures your skin from within.

The natural combination of antioxidants, vitamins, and minerals found in birch sap, lingonberry, and seabuckthorn offers a gentle boost to your skin’s natural glow, supporting hydration, rejuvenation, and vitality. And just like all true nourishment, these wild-harvested ingredients bring their benefits to your whole being — helping to support digestion, strengthen the immune system, and honour the beauty of living well, from the inside out.

Ingredients

  • 1.5dl/ 150 ml chilled birch sap water

  • ½ tsp of honey
  • 35g of lingoneberries
  • 15ml of sea buckthorn juice
  • 20 ml fresh lemon juice (brightening)

  • A small handful of fresh mint leaves

  • Sparkling water to top

  • Let your creativity flow to garnish the mocktail (Edible flowers, berries, lemon etc) 

Directions

    1. In a shaker, gently muddle the mint leaves and lingonberries 

    2. Add the honey, lemon juice, sea buckthorn juice, birch sap water and fill with ice.

    3. Shake the mixture for a few seconds.

    4. Use a strainer, coffee filter or shaker’s built-in filter to strain the mixture into a glass.

    5. Top with sparkling water.

    6. Garnish with edible flowers for a touch of wild beauty.

      Optional late-night variation:

      If you fee like unleashing your wild side, you can add 0.5 dl of vodka/gin.
